Plump mid-sections of large hairtail, cleaned with head, tail and entrails removed and the silver skin left intact. The flesh is dense and compact, so the pieces hold together in the pan and keep a tender bite. Mild and lightly sweet, with very little ice glaze on the pack. Pan-fry the segments until golden at the edges, or braise them with ginger and soy.
